Main Ingredients:
Pork Ribs (500g–600g): Cut into bite-sized pieces.
Dried Salted Plums (話梅): 6–8 pieces (soak in warm water for 10 minutes).
Rock Sugar (冰糖): 30g–40g (gives the sauce a brilliant shine).
Toasted White Sesame Seeds: For garnish.
Aromatics & Cooking Liquids:
Ginger: 4–5 slices
Green Onions: 2 stalks (cut into sections)
Shaoxing Rice Wine: 2 tbsp
Light Soy Sauce: 2 tbsp
Dark Soy Sauce: 1 tsp (for color)
Chinese Black Vinegar (or Rice Vinegar): 3 tbsp (divided)
Cooking Oil: 1–2 tbsp
Cooking Techniques & Steps
1. Blanching (去腥焯水)
Place pork ribs in a pot with cold water, 2 ginger slices, and 1 tbsp rice wine. Bring to a boil over medium heat.
Let it boil for 3–5 minutes to release impurities, then strain and rinse the ribs with warm water. Drain thoroughly.
2. Caramelizing / Melting Sugar (炒糖色)
Heat 1 tbsp of oil in your wok over low heat. Add crushed rock sugar.
Stir constantly until the sugar melts into a light amber/caramel bubble. Technique Tip: Keep the heat low to avoid burning the sugar, which creates bitterness.
3. Searing & Aromatics
Add the blanched ribs to the caramelized sugar and stir-fry quickly until every piece is evenly coated.
Toss in the remaining ginger slices, green onion, light soy sauce, dark soy sauce, 2 tbsp vinegar, and Shaoxing wine.
Stir-fry until fragrant.
4. Low-and-Slow Simmering (慢炖)
Pour in hot water until the ribs are just submerged. Add the soaked dried plums along with their soaking water.
Cover with a lid, bring to a boil, then turn the heat to low. Simmer for 25–30 minutes until the ribs become tender.
5. High-Heat Reduction (大火收汁)
Remove the lid, discard the spent ginger and scallion, and turn the heat to medium-high.
Stir constantly as the liquid evaporates and thickens into a syrup-like glaze.
Swirl in the final 1 tbsp of black vinegar right before turning off the heat to revive the bright acidity.
Plate the ribs, drizzle the remaining plum glaze over the top, and sprinkle with toasted white sesame seeds to serve.
